First thing - check your domain authority on Ahrefs or Moz (free). If you're at 8-20 you're in a good spot and content will index fast. If you're at zero Google basically ignores you no matter how good your posts are.
Biggest wins I've seen are from educational content. Stuff like strain comparisons, what terpenes actually do, difference between live rosin and live resin. People search this stuff constantly before they buy and most dispensary sites aren't answering it
"Dispensary near me" is a lost cause unless you have serious authority. But niche stuff like "best strain for focus without anxiety" or "indica vs hybrid for sleep" is wide open
One thing specific to cannabis - stay away from anything that sounds like medical claims. Google is weird about it and it can tank your rankings.
Local angle works too since you're only competing with other shops in your area. "[City] dispensary delivery" type content does well if you actually service those areas
The sites I see winning aren't doing anything fancy. Just consistant content that actually helps people decide what to buy
